Raspberry Sorbet
You need:
300g raspberries, goes well with frozen
1 dl water
1 dl sugar
lemon juice
Boil the sugar and water in a saucepan until the sugar has melt and the liquid clears and then leave it to cool.
Mix the berries to a smooth puree, I used a hand blender.
Mix the suger/water mix and the raspberry puré and season with lemon juice.
Then run it in a ice cream machine or set aside in the freezer for about 4 hours. Remember to move around the sorbet every hour so the ice cream becomes fluffy.
Oat sprinkle
1/2 dl flour
1/2 dl sugar
1/2 dl oats
50g melted butter
Mix all dry ingredients in a bowl. Melt the butter, pour it in the bowl and knead to a crumbly mass. Sprinkle crumbs on a baking sheet with parchment paper and bake in oven at 180 degrees for about 8 minutes.
After the sprinkle has cooled, add the crumbs on a plate, add the sorbet and decorate with mint leaves. :)
