There is much you miss when you do not live in Sweden anymore, as these lovely pastries, this is one of my favorites, so amazingly good and they can not be found anywhere here in Iceland! So had to make my own instead, so now I’ve learned that! :)


1 dl granulated sugar
1.5 dl hazelnut flour
0.5 dl of cornstarch
4 pcs egg whites
1 dl granulated sugar
300 g cream (whipped)
1 jar of mandarins
100g dark chocolate

Do this:

  1. Preheat the oven to 170 degrees. Add baking paper on a plate.
  2. Mix 1 dl granulated sugar, hazelnut flour and cornflour in a bowl.
  3. Beat the egg whites fluffy and firm, add a little sugar at a time (1 dl) and mix to a firm meringue. Mix in the dry ingredients with a spatula and mix gently until it is well mixed.
  4. Pipe out between 17-18 strings tight with a sprits on the parchment paper, or until the batter runs out.
  5. Bake in the oven at 170 degrees for 20 minutes, then open the oven for a few seconds and close again and bake for another 2 minutes.
  6. Remove the cake from the oven and let cool, put a baking paper on the cake and turn it upside down, and remove the baking paper from the cake.
  7. Apply a thin layer of cream, spread small mandarin pieces and roll into a roll.
  8. Drizzle a little melted dark chocolate and powder of powdered sugar.
