CRISPY CHICKEN FILLET WITH PARMESAN

 

 

This was our dinner today. Had all these ingredients at home, so didn’t even need to visit the super market today, yeyy haha. Had some chicken fillet and bake potatoes at home, so decided to make a crispy chicken and it turned out to be very good. I chose to serve it with a cold garlic sauce I have done before, it fits with everything. And a fried egg. :)

 

YOU NEED:
(4 pers) 

Breaded chicken fillet

4 chicken fillet, sliced in half so they get thinner
1 dl flour
1,5 dl breadcrumbs
1,5 dl grated parmesan
2 eggs
salt and pepper
Butter and oil for frying

bake potatoes, cut into wedges
olive oil
salt and pepper

Cold garlic sauce 

2 dl sour cream
2 tablespoons of mayonnaise
2 pressed garlic
1 tbsp honey
salt and pepper
olive oil

DO THIS: 

 

  1. Preheat the oven to 220 C
  2. Mix the potato wedges with olive oil, salt and pepper. Place them on a baking tray and put into the oven
  3. Then mix all the ingredients to the sauce and store it in the fridge
  4. Then prepare the chicken fillet. You will need 3 bowls, one with the flour, one with the breadcrumbs mixed with the parmesan and one with beaten eggs
  5.  You should first put the chicken into the flour, then the eggs and finally in the breadcrumbs/parmesan mixture (see pictures on top)
  6. Heat up a pan with some butter and oil. Fry the chicken (not to many at the same time) until it gets crispy and golden brown. And remember to low the heat because you can easily burn the crumbs fast.
  7. Serve it with the roasted baked potatoes, the garlic sauce and a fried egg, sunny side up. :)
