JEN’S CHICKEN PASTA WITH SUN DRIED TOMATOES AND SPINACH

This pasta is delicious, and so easy to make (I just do simple food ;) haha). Perfect weekday dish.

YOU NEED: 

400g pasta, I choosed Farfalle this time
3 chicken fillet, cut into pieces
1/2 jar with sun-dried tomatoes in oil or just how much u want in your pasta, cut into slices
2 banana shallots, finely chopped
2 garlic cloves, finely chopped
300 g of fresh spinach
4 dl cream
1 dl sour cream
Salt and pepper
olive oil
grated parmesan cheese

DO THIS:

Cook the pasta ‘al dente’ with salt and olive oil

Season the chicken pieces with salt and pepper

Fry the onion, garlic and the chicken in a hot pan with olive oil until the chicken gets a nice brown color.

Add the dried tomatoes and the spinach, and let it fry for about 5 min.

Add the cream and the sour cream

Add more salt and pepper if needed.

Add the cooked pasta in to the pan and mix everything together

Serve it with some olive oil and grated parmesan cheese. :)
