Who knew so much good things could fit on a small slice of bread. Bacon, creamy ricotta, basil and fig jam, all on top of a buttered baguette slice. What a combo!

1 package of bacon
1 sliced baguette
3 tbsp butter for frying
200 g ricotta
1 handful fresh basil for garnish
fig jam
sea salt and freshly ground black pepper
olive oil

Do this
  1. Fry the bacon in the pan or use the oven, but do not let them get too crispy. Put aside. When they have cooled, cut each slice into three parts.
  2. Preheat the oven to 200 degrees. Heat a pan with butter and toast the bread slices on both sides until they become golden.
  3. Spoon the ricotta on each slice of bread, and then put into the oven so the ricotta will be slightly warm, about 2-3 minutes.
  4. Garnish each toast with a small spoonful of fig jam, bacon slice, sprinkle with sea salt, freshly ground pepper, chopped basil and drizzle over some olive oil.
