Okay, this was so delicious! Maybe more like a summer cake I would say, but why not light up these grey days with this delicious white chocolate cake with raspberries. I can guarantee you if you serve this cake to your guests they will love it.


For the cake:
200 g butter (+ extra for the cake form)
250 g white chocolate
4 eggs
2 1/2 dl sugar
2 1/2 dl flour
125g fresh raspberries

Raspberry Cream:
125g fresh raspberries
2 1/2 dl whipping cream
2 tablespoons powdered sugar


  1. Preheat the oven to 175 degrees.
  2. Grease the form with butter and add breadcrumbs all around. The form should be about 24cm in diameter.
  3. Chocolate cake: Melt butter and chocolate in a saucepan over low heat.
  4. Stir in remaining ingredients except the raspberries.
  5. Pour the batter into the round shape form.
  6. Press the raspberries into the batter and bake in the middle of the oven for about 20- 25 minutes.
  7. The cake should be smudgy in the middle, let the cake cold a bit before serving. You can store it in the fridge for a little.
  8. Raspberry cream: Mash the raspberries in a bowl, whip the cream fluffy in another bowl and mix with the powdered sugar.
  9. Before serving add some powdered sugar all over the cake. Looks so much prettier. :)
