SMOKED SALMON AND SCRAMBLED EGGS WITH CREAM CHEESE

This is a real breakfast of champions! A perfect low carb dish and could also be good as a lighter lunch. Smoked salmon, scrambled eggs with cream cheese and fried spinach. Super quick to prepare and packed with good nutritions.

YOU NEED: 
Per person

2 big handful fresh spinach
2 eggs
2 tbsp milk
50 gram of smoked salmon
1 tbsp cream cheese with herbs
salt and pepper
Olive oil and butter for frying

DO THIS: 

  1. In a frying pan, heat some olive oil and add the fresh spinach. Salt and pepper and stir for a few seconds. Don’t let them shrink to much. Remove from the frying pan and place on a plate.
  2. In a little bowl, whisk the eggs and milk with some salt together with a fork. Melt some butter in the same pan in medium heat, then pour the scrambled egg mixture on top. Stir gently to make fluffy scrambled eggs.
  3. Place the warm scrambled eggs on top of the spinach, add smoked salmon then garnish with the cream cheese.
