This is a real breakfast of champions! A perfect low carb dish and could also be good as a lighter lunch. Smoked salmon, scrambled eggs with cream cheese and fried spinach. Super quick to prepare and packed with good nutritions.
YOU NEED:
Per person
2 big handful fresh spinach
2 eggs
2 tbsp milk
50 gram of smoked salmon
1 tbsp cream cheese with herbs
salt and pepper
Olive oil and butter for frying
DO THIS:
- In a frying pan, heat some olive oil and add the fresh spinach. Salt and pepper and stir for a few seconds. Don’t let them shrink to much. Remove from the frying pan and place on a plate.
- In a little bowl, whisk the eggs and milk with some salt together with a fork. Melt some butter in the same pan in medium heat, then pour the scrambled egg mixture on top. Stir gently to make fluffy scrambled eggs.
- Place the warm scrambled eggs on top of the spinach, add smoked salmon then garnish with the cream cheese.
